About this material
Shatavari is the tuberous root of Asparagus racemosus, a climber whose roots grow in dense clusters of finger-like tubers. The material is peeled while still fresh, because the outer skin is corky and will not soften later, then split, the central woody thread pulled out, and the halves dried to ivory white. Peeling is the step that decides the grade: an unpeeled tuber dries to a grey-brown and carries the skin grit into the mill. Buyers milling to a fine powder should ask for the split grade, which dries evenly through.
