About this material
Pippali is the dried immature fruit spike of Piper longum, picked while still green and hard, because a spike left to ripen loses pungency and crumbles on drying. Each spike is a single cylindrical body 2 to 3 cm long, greyish-black to dark brown, and made up of many minute fruits fused into the axis, which gives the surface its characteristic pebbled or honeycombed texture. The taste is pungent and biting with an aromatic note that separates it from black pepper. Whole spikes should be firm; a spike that crushes to powder between finger and thumb was picked late or stored damp.
