About this material
Fennel is botanically a schizocarp rather than a true seed, splitting into two ribbed halves called mericarps, and it is those halves that make up the trade article. Each is oblong, slightly curved and carries five pale longitudinal ridges. Colour is the grading axis: bold green material commands a premium over the yellow-brown, and green is a function of harvesting on time and drying in shade. Cleaning is done on gravity separators and destoners, which pull out soil, stalk and light immature seed. The aroma is sweet and anise-like and should be obvious on opening the bag.
