About this material
Dry ginger is the peeled, sun-dried rhizome of Zingiber officinale, and it is a different material from fresh ginger rather than a preserved version of it. The rhizome is scraped rather than cut so the resin cells immediately under the skin survive, then dried down to roughly a tenth of its green weight, at which point it snaps rather than bends. Kerala material runs pale and low in fibre, which matters for milling, because a fibrous rhizome blinds a screen. The broken surface should show a distinct darker ring where the endodermis sits.
