About this material
This is Cinnamomum verum, true or Ceylon cinnamon, and it is a different article from the Cassia that is often sold under the same name. The distinction is visible: a true cinnamon quill is made of many thin layers of inner bark rolled together into a compound tube, pale tan, thin-walled and brittle enough to crumble between the fingers, whereas Cassia is a single thick dark curl that resists breaking. The outer corky layer is scraped away before rolling, which is what leaves the pale colour. Aroma is sweet, delicate and warm rather than harsh.
