About this material
Dried Amla is the pericarp of Phyllanthus emblica with the stone removed. Fresh fruit is segmented by hand or machine, the hard six-ribbed stone discarded, and the flesh dried until it is hard and horn-like. Segments curl as they dry and take on a dark grey-brown surface, while the broken face stays paler. This is a fruit that repays careful drying: material dried too slowly ferments and sours, and material dried too hot goes black and loses the clean acid taste that is the mark of good Amla. The taste should be sharply sour with an astringent finish.
